I am not a caterer, but have done several weddings for family and friends. I always use Duncan Hines cake mixes, but make my own fillings and frosting.
The frosting recipe I use is:
1 cup shortening (Crisco, if you want pure white, if not you may want to use 1/2 cup oleo or butter and 1/2 cup Crisco.)
1 lb. confectioner's sugar
Flavor to taste with vanilla and butter or add almond.
There are no rules now as to flavor of the cake, the filling, or frosting. I am doing one this summer that will have an oreo cookie filling and candy bar fillings.
