The German Potato Salad recipe belonged to a little lady that worked for me for many years. She has since pasted away but I always think of her when I make this.
When I'm going to have this meal I always cook my pork roast in the crockpot the day before, then it slices very well the day I plan to serve it. Just pour your favorite sauce (I use a local sauce) over the sliced meat and heat.

Becky's German Potato Salad

2 1/2 lb. potatoes, boiled in skins
2 hard boiled eggs, chopped
1/4 cup celery, chopped
1/4 cup onions, chopped
1/8 cup pimentos, diced
5 slices cooked bacon, crumbled

Sauce:
1/2 cup bacon grease
2 tablespoons flour
1/2 cup water
3/4 cup sugar
3/4 cup white vinegar
1 rounded tablespoon salt

Peel cooked potatoes and slice. Layer the celery, onions, pimentos, eggs and bacon on the sliced potatoes.

To make the sauce:

Melt bacon grease, add flour and cook but be careful not to scorch. Add remainder of ingredients and bring to a boil until it starts to thicken. Remove from heat.
Pour warm sauce over potato mixture. Gently coat potato mixture.

This is a wonderful dish to take to picnics in the summer as it can be served at room temp and won't spoil easily.

Mile High Coconut Pie

1 (9-inch) baked pie shell

Filling:
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
3 egg yolks, slightly beaten
2 cups milk
2 tablespoons butter
1 teaspoon vanilla extract
1 cup flaked coconut

Meringue:
4 egg whites
1/4 teaspoon baking powder
1/2 cup sugar

For filling:
Combine sugar, cornstarch and salt & mix well.Add egg yolks and stir. Add milk. Cook slowly until thick, stirring constantly. After pudding is thick, add butter and vanilla and coconut. Pour into baked pie crust.

For Meringue:
Beat egg whites with baking powder until stiff. Add 1/2 cup sugar and blend well. Cover Pie with meringue, making sure to seal the edges. Brown in 325 degree oven for 15 minutes or until golden brown.
