Recipe: Whole Wheat Pasta with Chicken, Spinach, and Roasted Tomatoes

Whole Wheat Pasta with Chicken, Spinach, and Roasted Tomatoes
Serves 6

Roasted Tomatoes
Saut ed Spinach (Package Baby Spinach)
3 Boned, Skinned Chicken Breasts
1 Tablespoon Olive Oil
Salt & Pepper
1/2 Cup Grated Pecorino (Parmesan can be used too) Romano Cheese
1 Pound Whole Wheat Pasta or whatever pasta is available

Rub the chicken breasts with the olive oil, salt and pepper, and bake in a preheated oven at 375 degrees until cooked through, about 30 minutes. Remove the chicken from the oven, and cut into 1 1/2 inch cubes. Set aside. Chop the tomatoes coarsely including any juices and oil in the pan, and add these to the chicken pieces.

Cook the pasta until it is al dente . Return the pasta to the pot, and add the spinach, tomatoes, and chicken and cook a few minutes over high heat until piping hot. Serve topped with grated Pecorino cheese.
