SPICED APPLE COFFEE CAKE
2 cups flour
1 1/2 cups sugar
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
2 large eggs
1/2 cup oil
1/2 cup brewed strong coffee, room temperature
2 tsp. vanilla extract
2 1/2 cups chopped peeled apples
1 cup chopped nuts.
Preheat oven to 350 degrees F. Lightly butter and flour a 9x5-inch loaf pan.
Stir flour, sugar, cinnamon, baking soda and salt in large bowl; set aside.
Beat eggs in small bowl; stir in the oil, coffee and vanilla. Add egg mixture to flour mixture and stir just until moistened. Stir in the apples and nuts. Pour the batter into prepared pan.
Bake for 55 to 60 minutes or until a toothpick inserted in center comes out clean. Cool in pan for 10 minutes on a wire rack. Loosen cake from sides of pan with spatula or knife. Gently invert cake onto wire rack. cool completely.
Cut into slices to serve.
Makes 1 (9x5-inch) loaf, 12 servings
