GREAT GRAMMA'S GERMAN APPLE CAKE
FOR THE CRUST:
1 1/2 sticks (3/4 cup) butter
3 cups flour
1/2 cup sugar
1 tsp. salt
1 tsp. baking powder
1 egg
1 cup milk
FOR THE FILLING:
3 lbs. apples, peeled and sliced
1 cup sugar
1 tbsp. lemon juice
Cinnamon
Butter
TO PREPARE THE DOUGH:
Mix egg and milk together with fork. Mix sugar and butter with spoon; add flour, salt, baking powder, egg and milk mixture. Mix until flour is absorbed.
Flour board well; divide dough in half and roll out to fit a 15x11 pan. Roll dough lightly; do not overwork. Keep rolling pin well-floured.
TO ASSEMBLE AND BAKE:
Place half of dough in bottom of pan; add cut apples. Sprinkle with sugar, lemon juice and cinnamon. Dot with butter.
Roll top crust and place on top of apples, prick with fork.
Bake 1 hour at 350 degrees F.
SLAB APPLE CAKE
FOR THE CRUST:
3 cups flour
1/2 tsp. salt
3 tbsp. sugar
1 tsp. baking powder
1 cup soft shortening
2 egg yolks
8 tbsp. water
FOR THE APPLE FILLING:
14-16 medium tart apples, peeled and sliced
2 tbsp. flour
1 1/2 to 2 cups sugar
1/2 tsp. cinnamon
2 tbsp. butter
2 tbsp. lemon juice
POWDERED SUGAR GLAZE:
2 cups powdered sugar
1 tsp. butter, softened
4 tsp. warm water
TO PREPARE THE CRUST:
Mix dry ingredients until well blended. Cut shortening into flour mixture.
In separate bowl, mix egg yolks and water. Add to flour mixture. Mix well until dough forms a ball. Separate into two balls. Roll out 1 ball to cover cookie crust. Place on cookie sheet for bottom crust.
TO PREPARE THE FILLING:
Arrange apple slices on bottom crust. Combine flour and sugar, sprinkle apples with flour and sugar mixture and cinnamon. Dot with butter and lemon juice.
Roll out second dough for top crust and place over the fruit. Pinch edges together.
Bake at 350 degrees F for 1 hour or until. Cool.
Frost cooled cake with powdered sugar glaze made by combining the powdered sugar, butter and 4 teaspoons warm water.
NORWEGIAN APPLE CAKE
1 1/2 cups sugar
2 1/2 cups flour
2 sticks (1 cup) butter
2 tsp. baking powder (add to flour)
2 eggs
2 1/2 to 3 cups peeled and grated apples
3 tbsp. sugar
Cinnamon to taste
Mix sugar, flour and baking powder. Cut in butter as you would for pie crust.
Beat eggs and mix with dry ingredients; mixing will be crumbly. Spread half the dough in a round spring pan or cake pan, patting it in place.
Mix the peeled, grated apples with 3 tablespoons sugar and a sprinkle of cinnamon. Spread evenly over dough. Spoon remainder of dough over top of apples.
Bake at 375 degrees F for 50-60 minutes. Spread powdered sugar frosting on cake with a little nutmeg mixed in to improve the flavor.
OLD FASHIONED APPLE COFFEE CAKE
2 1/2 cups flour
1 cup butter or margarine
1/2 tsp. salt
1 tsp. baking powder
1 whole egg
1/4 cup milk
3 or 4 apples, peeled and sliced*
3/4 cup sugar
3 tbsp. flour
3 tbsp. butter
1 tsp. ground cinnamon
Combine dry ingredients. Blend in butter with pastry blender. Add egg to which milk has been added. Line 9x13-inch pan with crust by patting with fingers. Cover with peeled, sliced apples in rows.
Combine remaining ingredients and blend with pastry blender. Sprinkle over cake.
Bake at 375 degrees F until apples are tender, about 30-35 minutes. Do not over bake.
*VARIATION:
May use sliced peaches or 1 1/2 cups blueberries omitting cinnamon.
