Roasted tomatoes, cheese tortellini and mozzarella.

I could not find a clone recipe on the Internet. Hopefully you can use this recipe to experiment with. Good luck and please share your results with us.

TOMATO BASIL SOUP WITH CHEESE TORTELLINI

Serves 2

1 teaspoon olive oil
1 clove garlic, pressed
1 can (15 oz size) crushed tomatoes, undrained
1 1/2 cup chicken broth
1/4 cup snipped fresh basil
1 bag cheese tortellini

Combine oil and garlic in 3 qt saucepan, cook and stir over medium heat until garlic is golden brown. Immediately add tomatoes, chicken broth and basil. Bring to a boil. Reduce heat and simmer 5 to 7 minutes stirring occasionally.

Meanwhile, cook tortellini according to directions. Drain, and add to tomato basil soup. Salt and pepper to taste.
