Recipe: Zimtsterne (Cinnamon Stars), Christmas Cinnamon Stars, Cinnamon Stars
Desserts - Cookies, Brownies, BarsThere are no Hough Bakery recipes available online for the Cinnamon Star Cookies on the Internet. Hough Bakery recipes are very hard to find. However, I did find several recipes for cinnamon star cookies. Perhaps you could adapt one of them. Good luck and share your results with us.
ZIMTSTERNE (CINNAMON STARS)
Makes 3 1/2 to 4 dozen
2 egg whites
1 1/4 cups granulated sugar
1 1/2 cups unblanched ground almonds
1 1/2 tbsp. ground cinnamon
FOR THE GLAZE:
1 cup powdered sugar
2 tbsp. water
Warm egg whites to room temperature and beat to soft peaks. Gradually add sugar to egg whites and beat until thick and glossy, around 10 minutes.
Combine the almonds and cinnamon and stir in egg white mixture. Refrigerate dough, covered, overnight.
WHEN READY TO BAKE:
Roll out dough to 1/4 inch thickness, one half at a time on a surface sprinkled with flour and sugar. Cut out cookies with small star-shaped cookie cutters. Place 1 inch apart on lightly greased cookie sheets. Let stand uncovered at room temperature for 2 hours to dry.
Prepare glaze by mixing together the powdered sugar and 2 tablespoons water; set aside.
Bake cookies at 300 degrees for 15 minutes, brush with glaze, and then bake an additional 3 to 5 minutes more. Cool on a wire rack.
CINNAMON STARS

Makes 6 dozen cookies
"A must on your Christmas cookie tray. Despite the lemony frosting, the cinnamon flavor comes through."
1 1/4 cups flour
1 cup sugar
1 cup ground walnuts
2 egg yolks
grated rind of 1/2 lemon
1 tsp ground cinnamon
1/2 tsp ground cloves
10 tbsp unsalted butter
FOR THE ICING:
1 1/2 cups confectioners' sugar
1 egg white (pasteurized)
2 tbsp lemon juice
2 drops yellow food coloring (optional)
On a pastry board, mix flour, sugar and walnuts. Form a mound, make a well and add the egg yolks, lemon rind and spices. Cut the butter in small pieces and add to the flour mixture. Knead thoroughly to make a smooth dough. Let dough rest for 30 minutes in the refrigerator.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F.
Roll dough out with a rolling pin to 1/8-inch thick and cut into star shapes with a cookie cutter.
Bake at 350 degrees F until cookies are lightly browned, about 10 minutes. Let cool and decorate with the icing.
TO MAKE THE ICING:
Mix sugar, egg white, lemon juice and yellow food coloring (if using) in a bowl until very smooth. (Icing has to be thick enough so it will not run off stars.) Spread evenly with a pointed knife on the stars. Let icing dry overnight. Store in a cookie tin.
Note: If you like a less sweet cookie, omit the icing.
