I worked for Phil's Inn as a teen in the late 80's and the sauce was made daily using the big #10 cans of Red Pack brand canned tomato paste and puree, lots of sugar, Phils secret spices and then the real secret is cooking it long enough and stopping right before it burns or scorches so you get that well cooked dark taste, they also cook it in a pressure cooker not on a stovetop.
