Recipe: Coconut Bean Soup (Tanzania)

COCONUT BEAN SOUP (TANZANIA)

1 large onion, chopped
1 medium bell pepper, chopped
1 teaspoon curry powder
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil
1 can tomatoes, chopped
3 cups kidney beans
3 cups water
2 cups coconut milk
1 cup rice, cooked

Saute onion, peppers, curry powder, salt, and pepper in oil for 5 minutes.

Add tomatoes and simmer for 10 minutes.

Add beans, water, and coconut milk. Simmer for 5 minutes.

Add rice, stir well and serve.
