ISO: Applebee's Blackened Chicken Fettucine (discont.)

Applebee's discontinued a great cajun/creole pasta dish a few years ago. Two pasta dishes actually. Blackened Chicken Fettucine and Jambolaya pasta. I've been searching for these recipes since it was removed! Please help!!
