Recipe: Muffin Tin Breakfast
Breakfast and BrunchMUFFIN TIN BREAKFAST
6 slices bacon
6 eggs
salt and pepper (to taste)
1 tbsp butter or margarine, divided use
1/4 cup half and half, divided use
Partially cook bacon; drain on paper towels until slightly cool.
Cut a 1-inch piece from each bacon slice, and place a piece in the bottom of each of 6 muffin cups.
Wrap remaining bacon strips around sides of muffin cups, and break an egg in center of each. Top each with salt, pepper, 1/2 tsp butter, and 2 tsp half-and-half.
Bake at 350 degrees F for 15-25 minutes. To make removal easier, loosen edges with a knife.
