ISO: Chicken Sauce Piquant

Hi all!

I'm searching feverishly for a tried and true chicken sauce piquant recipe. Essentially, it's a Cajun chicken dish in a spicy tomato sauce. I've found some variations in some of the usual recipe archives, but many of them were for large crowds.

Any help would be appreciated!
