ISO: Christmas cookie recipe needed

Hi, I am looking for a Christmas cookie recipe for cutout cookies which is not a flat hard cookie recipe. I like fluffy soft cookies and with rolled cookies this is a tough one. Anyone have a suggestion? Thanks!
