ORANGE-BRAISED PORK
2 1/2 cups orange juice
2 cups beef or chicken stock
1 teaspoon low-sodium soy sauce
1 clove garlic, minced
1/4 cup honey
2 tablespoons wine vinegar
1/2 teaspoon ground ginger
1/4 teaspoon dry mustard
1 1/2 pounds pork tenderloin, in 3/4-inch cubes
1 tablespoon corn oil
1 tablespoon cornstarch
2 tablespoons cold water
In a 2-quart bowl, combine orange juice, stock, soy sauce, garlic, honey, wine vinegar and spices. Marinate pork in this mixture 2 hours.
Drain pork, In a 10x2-inch skillet, saute pork in oil until brown.
Add marinade to skillet, cover and simmer over low heat until pork is tender, 30-45 minutes.
Dissolve cornstarch in water; add to pork, stirring until liquid is thickened.
Serve over cooked rice.
