ISO: Cold Storage Pickles

My Mom used to make a Horseradish crock pickle when I was a child. The crocks would stay in the root cellar for several weeks before the pickles were ready. There were long slivers of fresh horseradish root in the brine. The result was a wonderfull hot, crisp deli style pickle. I cannot locate a recipe anywhere for this pickle. Can anyone help?
