Recipe(tried): THE BEST PIMIENTO CHEESE OF ALL TIME!!!!

Y'all know how particular I am. I cannot abide by anything mediocre when it comes to food. After all, you have to enjoy the pleasure of the delicious food before you.

My friend Margie shared her Pimiento Cheese recipe with me about 3 weeks ago. I made it for a party and since then, I have made it 5 times! My DH loves having a container of it in the fridge so that he can make a white bread sandwich with it. I have to admit, it is wonderful to have in the fridge for a quick sandwich or supper. I simply love the ease and the taste of this pimiento cheese. She has graciously allowed me to share it with you.

Now, the grated Vidalia onion is optional. We don't like the taste of raw onion therefore I omit it. I use the juice from the pimientos instead. I promise you, this is heaven!!

This is her recipe as sent to me, very funny gal!!!

PIMIENTO CHEESE SPREAD A LA MARGIE

8 oz. cheddar cheese (medium or sharp or a combo)
One small jar diced pimento
1 teaspoon lemon juice
1 teaspoon L&P Worcestershire
1/2 tsp. finely grated onion (Vidalia, of course...actually you just need it juicy)
1 tablespoons sugar
1/2 cup mayonnaise (I use Hellman's...you'll use Dukes)
1 small tub of soft cream cheese

Grate cheese (I use my Cuisinart grater blade to rough grate, then put in chopper blade)
Drain pimento and add to bowl with remaining ingredients and pulse until desired consistency. I leave it a little chunky.

Total prep time...2 minutes.

You may also want to add a dash or four of Tabasco sauce, black or lemon pepper, garlic powder, etc. to taste or make it strictly your own. This is great on served on celery, butter crackers, white bread, off an old Chevy back bumper, etc.
