Hi Florence,

I haven't tried this recipe, but it could be the flour needed to be 'fluffed/stirred' more before measuring so there may have been more flour (by weight) in the cup. Or, maybe one of the liquid ingredients (water, milk, oil, eggs) was left out? Last week I made a batch of banana muffins and forgot to add the sugar (they actually were pretty good with fruit spread on them).

As long as you have the right dough consistency it should be fine - if the egg or oil are missing it just won't be as rich and may not keep as well.
