ORANGE BAKED FISH
1 1/2 pounds fish fillets, fresh or frozen
1/3 cup melted margarine or cooking oil
3 1/2 tablespoons orange juice
4 teaspoons grated orange rind
1 1/4 cups finely crushed bacon-flavored crackers (or plain crackers)
1 teaspoon paprika
1/2 teaspoon seasoned salt
Orange slices (for garnish)
Thaw fish if frozen. Skin fillets; cut into serving-size portions.
Combine margarine, juice, and orange rind; set aside.
Mix crackers, paprika, and salt.
Dip fish in margarine mixture and roll in cracker mixture. Place fish in a single layer in a well-greased, 1 1/2-quart shallow casserole. Pour remaining margarine mixture over fish.
Bake at 450 degrees F for 10 to 12 minutes or until fish flakes easily when tested with a fork.
Garnish with orange slices.
