ISO: easy does it yeast bread with variations - question

I am as we type making this basic white bread, but have a problem with the amount of flour, I used the 21/2 c. flour in the start of the recipe , but could not use the reaminging 4 to 5 remaining c.used after the sticky dough . I only used the 3c. The dough was firm , and elastic with just the 3c of flour......What happened??????????/ Florence
