ISO: help- for spring wedding for 250 -

I am catering a friends outdoor wedding this spring. They expect about 250 people. The bride and groom are travelers and wasnt to have 5 or 6 ethnic food tables - Italian, a Tapas style table, South American, French, Indonesian,etc. Any suggestions for substancial appetizers and/or main dishes would help. I particularly need make ahead ideas as kitchen space is limited. Any suggestions will be greatly appreciated as I've never cooked for this many before. Thank you.
