MIX-EASY CAKE
1/3 cup oil
Chocolate or butterscotch choice (below)
3/4 cup liquid choice (below)
3/4 cup sugar
1 egg
1 1/4 cups flour
1/2 teaspoon baking soda
1 handful add-in choices(s) (below)
Heat oil and chocolate or butterscotch selection in an 8-inch square nonstick pan (or greased baking pan) in a 350 degree F oven for 2 minutes.
Remove from oven and stir with a fork until smooth.
Add 3/4 cup liquid selection and sugar, egg, flour and baking soda. Stir together until smooth - about 2 minutes. Stir in a handful of add-ins, reserving some to scatter over top before baking.
Bake at 350 degrees F for 30 minutes or until a toothpick inserted comes out clean. Cool.
CHOCOLATE OR BUTTERSCOTCH CHOICES:
2 squares (1 ounce each) semisweet chocolate
2 squares (1 ounce each) unsweetened chocolate
2 squares (1 ounce each) white chocolate
1 cup butterscotch chips
LIQUID CHOICES:
Coffee
Water
Orange juice
ADD-IN CHOICES:
Shredded coconut and chopped pecans
Chopped walnuts and semisweet chocolate chips
Chopped almonds and dried apricots, plus a spoonful of orange peel
Chopped walnuts
TIP:
No wooden toothpick? Use a piece of uncooked spaghetti instead.
