Recipe: Apple Pudding Cake

APPLE PUDDING CAKE

2 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 tsp vanilla
2 cups Gold Medal all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
4 medium apples, chopped (4 cups)
1/2 cup chopped nuts
FOR SERVING:
Whipped cream or ice cream, if desired
Additional chopped apples, if desired

Heat oven to 350 degrees F. Grease rectangular pan, 13x9x2 inches.

Beat sugar, butter, eggs and vanilla in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, baking powder, cinnamon and salt. Stir in 4 cups apples and the nuts. Spread batter in pan.

Bake 55 to 60 minutes or until toothpick inserted in center comes out clean.

Serve warm with whipped cream and additional apples.

Makes 15 servings
