MANICOTTI
FOR THE PASTA:
1 cup flour
1 cup cold water
3 eggs, beaten well
FOR THE FILLING:
1 pound ricotta cheese
2 tablespoons Parmesan cheese
1 tablespoon chopped fresh parsley
1 egg
Salt and pepper (to taste)
FOR BAKING:
Tomato sauce (homemade or purchased)
Parmesan cheese
Place about 1 1/2 tablespoons of the batter in a small iron frying pan. Spread the batter. It should look like a pancake. Cook on both sides. Lay each on a slightly floured counter. Make about 25 circles
Combine ingredients for the filling.
Place filling on each circle. Roll to close. Place in a baking dish. Top with tomato sauce and parmesan cheese.
Bake in a 350 degree F oven about 20 minutes. Let stand 10 minutes before serving.
Makes about 25 manicotti
