ISO: North Carolina coleslaw

My wife recently went on a business trip to western North Carolina and before leaving I urged her to try "Carolina BBQ." She did and found it okay (just okay??!!), but what she really raved about was the cole slaw with a catsup or tomato based dressing. I'm batting zero trying to find a recipe. Any help would be greatly appreciated. Thanks!
