ISO: Pasta or potato dish without meat.

We are having my Husband's two brothers and one sister-in-law from out of town, for a Sunday dinner next month.

I am planning on doing marinated chicken breasts on the GF grill, tossed salad and a couple of different veggies. One brother is a vegetarian and won't be eating the chicken. I would like to come up with a hearty pasta or potato dish that would be good with the chicken and act as a main dish for the vegetarian.
Any neat ideas????
