ISO: Pollo frita

Hi, I'm looking for a way to make spanish chicken. I've been to Puerto Rico and I'm talking about that amazing chicken the sell in the little stands with arroz and tostones. I guess it would be called Pollo frita. I would really appreciate it if anyone has any recipes. Thanks.
