ISO: Re: ISO: Enchilada recipe

Misc.

My mother-in-law gave me this recipe. The only problem I've had is that I cannot seem to keep the tortillas from splitting once they're filled, so it's more like an enchilada casserole. Good, though...
Enchiladas

*Preheat oven 350.

2 lbs. ground beef
1 onion, chopped
garlic salt to taste
*Brown and drain.

1 pkg. dry enchilada mix
1 15 oz. can tomato sauce
*In small saucepan, combine mix, tomato sauce, and 1 can water; boil.

*Add some sauce to ground beef (enough to moisten well) and simmer 10 mins.

1 lb. shredded colby cheese
1 package corn tortillas
*Cover bottom of large baking pan with sauce. Dip tortillas in sauce and fill with meat and cheese. Roll and put seam-side down in pan.
*Cover with extra sauce and cheese.
*Cover and bake for 20-25 mins.
