Recipe: Cafe Tu-Tu Tango Hurricane Shrimp

CAFE TU-TU TANGO HURRICANE SHRIMP

FOR THE HURRICANE SAUCE:
10 oz. honey
1 oz. chopped fresh garlic
1 oz. Worcestershire sauce
2 tsp. dried oregano
2 tsp. salt
1 1/2 tsp. shrimp base
1 tsp. ground black pepper
1 tsp. ground cayenne pepper
1 tsp. dried thyme
1 bay leaf
2 Tbsp. roux (see recipe)

FOR THE HURRICANE SHRIMP:

1 Tbsp. vegetable oil
5 shrimp (16/20 per lb.)
2 oz. hurricane sauce
FOR SERVING:
1/2 cup white rice, cooked
1 tsp. chopped scallions (to garnish)
5 slices French bread

TO PREPARE THE HURRICANE SAUCE:
Mix together all ingredients for the sauce in a sauce pot (except the roux). Bring to a boil, then whip in the roux. Turn heat down and let sauce simmer for 10 minutes.

TO PREPARE THE HURRICANE SHRIMP:
Heat saute pan with oil, saute shrimp, add the Hurricane Sauce, and toss well until all shrimp are coated.

TO SERVE:
Place white rice in the center of a plate and arrange shrimp around rice. Pour remaining sauce around rice and shrimp. Garnish plate with scallions and sliced French bread.
