ISO: rice

I am looking for a rice red beans and chicken recipe, when i lived in NJ i had a friend that was from Peurto Rico and his mom used to fix this dish for us all the time, the rice was fluffy and the beans and chicken chunks where mixed in to the rice, the rice always had a reddish orange tint to it. it was never mushey like cajun red beans and rice. I am sure this was a dish she learned as a child in Puerto Rico. Thanks in advance Tony Avallone
