FIRE STRINGS CAJUN PASTA
I worked at Garfield's years ago & cajun pasta Was my#1 fav ever! Here is as close as I can get with out exact details... and well, its how I recreated it at home & still do today.....
I cook my chicken in a George foreman or other type of grill With a good coat of a cajun spice rub (Creole).
When its done, slice it up and saute with butter - they used "grill butter", onions, green peppers, mushrooms, & pepperoni slices, ... still at this point only thing seasoned with the Creole spice is the chicken...
Use penne pasta cooked, Alfredo sauce (add nothing to season the sauce, just plain Alfredo).
They topped it with fire strings which was just very thin potato & onion slices that were fried and then rolled in the Creole spice.
So season the chicken & the firestrings only & use plain Alfredo sauce.
