Recipe: Avocado Toast with Balsamic Glaze (and pomegranate glaze variation)

"Avocado toast is so popular that some restaurants now have it on the menu. Instead of paying $10 for an order, you can make your own. Start with a simple avocado-tomato combo, and once you've mastered it, move on to more creative additions, like beans and sriracha, fried egg, sliced strawberries, or smoked salmon and crumbled feta."

One pot/one pan
30 minutes
Prep time: 5 minutes
Cook time: 10 minutes
FOR THE BALSAMIC GLAZE:
1/4 cup balsamic vinegar
1 tablespoon brown sugar
FOR THE AVOCADO TOAST:
1 ripe avocado, halved and pitted
2 slices 100% whole-wheat bread, toasted
5 cherry tomatoes, halved
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
TO PREPARE THE BALSAMIC GLAZE:
In a small saucepan over medium heat, heat the vinegar and brown sugar, stirring constantly, until the sugar dissolves. Bring the mixture to a boil, lower heat, and simmer for about 10 minutes, until the vinegar is reduced by half and thickens. Set aside to cool for 10 minutes.
TO PREPARE THE AVOCADO TOAST:
Scoop out the flesh from each avocado half onto a slice of toasted bread. Mash the avocado with a fork until it is flattened.
Top each slice of bread with 5 tomato halves, and sprinkle with the salt and pepper.
Drizzle about 1/2 tablespoon of the balsamic glaze on each avocado toast.
TOBY'S TIP:
VARIATION - POMEGRANATE GLAZE:
You can make a glaze using 100% pomegranate juice. Heat the juice over medium heat until it reaches a boil. Then lower heat and simmer until the juice is reduced by half and becomes so thick it sticks to the bottom of a spoon. It's a tasty alternative to balsamic glaze that you can use on chicken, fish, and avocado toast.
