ISO: Salads from Sweet Tomatoes Rest

Would like recipes for Pineapple Coconut Coleslaw and Oriental Chicken Salad, oth served at Sweet Tomatoes Restaurant, also known as Soup Plantation. Some of the ingredients of the chicken salad are greens, chicken and what looks like deep-fried strips of tortillas or something similar. The coleslaw has a definite coconut taste, with tidbits of pineapple included, but I don't recall if it actually had coconut in it. Your help is appreciated.
