PARMESAN-BASIL CREAM SAUCE
Yield: 2 cups
1/2 cup basil puree (recipe follows)
2 cups heavy (whipping) cream
2 tbsp parmesan cheese, grated
salt and white ground pepper (to taste)
Reduce basil puree by one-half. Add cream, reduce to a smooth consistency, and remove from heat. Add Parmesan cheese, salt and white pepper. Strain and reserve. (Sauce should be of a medium consistency.)
TO MAKE BASIL PUREE:
In a blender, puree fresh basil with 1 tablespoon of white wine.
