Recipe: Self-Pickling Onions (BH&G 1960's)

Preserving - Pickles, Relishes
SELF-PICKLING ONIONS
"Delicious with hamburgers or in a tossed green salad."

Slice 1 or 2 medium onions in 1/4-inch slices. Separate in rings and drop into a jar of pickle juice (be sure there is enough juice to cover onion). Either dill-pickle or sweet-pickle juice works fine.

Refrigerate onions 2 or 3 days to pickle.
