ISO: Shrimp Ceviche- Carlos-n-Charlies

When we were in Cozumel recently, we snacked at Carlos & Charlies and had an awesome shrimp ceviche appetizer. Any recipe, not necessarily that one, would be appreciated. Basic description from the menu is 'marinated in lime juice, tomato and onion, served with chips. It was great and I would love to make it esp. being football season and all...thanks in advance!
