ISO: What are potato flakes and is there a substiture for them???

Hi, I have just began to actually "cook" and have ran across several bread recipes that call for instant potato flakes. I have never used them in baking before and was wondering if anyone could tell me what they are and if there possibly is a substitute for them. Thanks for all your time and help.
