I really appreciate the time you took to respond to this. After reviewing my procedure, the recipe (several recipes actually) and racking my brain, I think the cake was slightly undercooked. I have used frozen egg whites successfully in the past and haven't had a problem. In any event, my husband and I had another glob of it today. It seemed to be cooked, but it also seemed slightly sticky; or stickier than normal. I think because of the chocolate color I was worried about overbaking it and pulled it out just a little too soon. It did seem to test for done, but I think if I had just given it 3 or 4 more minutes in the oven that would have eliminated the problem.

Anyway, thanks again for your always generous help. Here's to good cooking!
