I have been searching for a good rum cake recipe for days. I tried the one with the yellow cake mix and pudding mix but it was not the same as I have tasted in the past. I like to bake from scratch anyways but couldn't find one until now. Thanks for the recipe which I have copied below. I did make one change to it instead of one cup buttermilk I used 1/2 cup of dark spice rum and 1/2 cup of water. Oh and I added the pecans. It came out really really good and my husband really liked.
Excellent rum cake recipe from scratch and no boxes....
1 cup butter
2 cups white sugar
4 eggs
1/2 water or milk
1/2 dark rum
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup of pecans or walnuts
FOR THE GLAZE:
1 cup butter
1 cup white sugar
1/2 cup rum
Preheat oven to 350 degrees F.
Grease and flour pan a Bundt or tube pan. Sprinkle the pecans on the bottom of pan.
Cream the butter and sugar together on medium then add one egg at a time mixing well after each one.
In a separate bowl sift the flour, baking powder, baking soda and salt.
-adding to the cream the flour mixture and the liquid alternating them in slowly. Stir in the vanilla. Pour batter into prepared pan.
Bkae 50-60 minutes for bundt/tube pan. Remove cake on to platter poke holes into cake with a fork then pour glaze over slowly and a little at a time to give cake time to absorb.
TO MAKE THE GLAZE:
bring to boil butter and sugar in sauce pan for a few minutes, remove from heat then add rum.
