Thank You: Pickled Jicama, Feliz/AZ

I love using jicama in salads but then we get tired of it and I had no idea how to extend it's shelf life. I expect that this will prolong it's life to some extent because of the vinegar in the recipe. I can picture it in sandwiches and salads. It would give both a nice crunch and "tang":-)!!
