Recipe(tried): Pickled Jicama

Preserving - Pickles, Relishes
I,ve been making this for years to add to salads and sandwiches etc.

PICKLED JICAMA

1 medium jicama, peeled and thinly sliced
1/2 cup water
1/2 cup vinegar
1 medium onion, sliced
4 garlic cloves, peeled
1 teaspoon sugar
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon black pepper
1 teaspoon oregano
1 bay leaf

Place jicama in a saucepan. Add water, vinegar, onion, garlic, sugar and salt. Bring mixture to a boil and simmer until jicama is tender. Add oil, pepper, oregano and bay leaf. Continue to boil for 5 minutes. Remove from heat and cool to room temperature. Refrigerate at least 24 hours before serving. Makes 31/2 cups
