Recipe: Apple Stuffed Butternut Squash (using bacon, onion and brown sugar)

2 medium butternut squash
4 slices bacon
2 tbsp minced onion
1/4 cup firmly packed brown sugar
1/4 tsp ground cloves
1 (1 lb 4 oz) can pie sliced apples, well-drained
Wash squash and cut in half lengthwise.
Saute bacon until crisp. Remove from pan and crumble. Pour fat from pan. Place squash in casserole, cut side up. Set aside.
Saute onion until tender. Stir in sugar, cloves and drained apples and cook until glazed, about 3 minutes.
Spoon apple mixture on top of squash. Sprinkle with crumbled bacon.
Bake, covered, at 350 degrees F for 50 minutes. Uncover and bake 20 minutes longer or until squash is tender.
Makes 4 servings
