Hi Betsy, thanks for the recipes. Felicia Willet was an apprentice under Emeril for several years, she helped co-author his cookbooks and helped on his TV Show.
She now owns a wonderful restaurant in downtown Memphis called Felicia Suzanne's. In fact this Christmas, instead of having Christmas dinner in my home, the children and grand children requested having dinner at Felicia Suzanne's........I live downtown overlooking the Mighty Mississippi River........so we will hop a Trolley for a short ride to her restaurant, wearing our musical Santa Hats and singing Christmas Carols to have our Family Christmas Dinner with Felicia. What fun that will be and how easy!!!!! Felica is from my hometown in Arkansas, same as her Mother, a good friend of mine and both are great cooks!! If you are ever in Memphis, please be my guest at Felicia Suzanne's.....the Suzanne is for her mother.
