TRADITIONAL MOONCAKE
These are tested recipes. I have change very little of the original recipe. I have had very good luck and am pretty happy with the outcome. I got all these recipes from families and friends.
GOLDEN SYRUP:
600 gm Sugar
450 ml Water
3 slices of lemon
slices of 1 whole lime.
Bring all ingredients to a boil over low heat until it turns golden brown. Remove all slices of lemon and lime. Let the whole pot cool. Strained through a strainer and store in an airtight container. Use after a week later.
I always cook mine ater the festival and store them in cool and dry places.
MOONCAKE SKIN:
250gm Golden Syrup
90gm Corn Oil/Peanut Oil
1/2 tsp Alkaline Water*
1/2 tsp baking soda
300gm sifted all-purpose flour
Mix syrup, oil, alkaline water until well blended. Add in flour and baking soda. Mix well and let dough rest for 2 hours.
Divide dough into 40gm pieces. Wrap about 90gm filling with flatten dough. Lightly dust mold and press cake into it and knock it out. ( can also use 2in or 3 in cookie ring or any other shape, less angle is better)
Bake at 375 degree F for about 25 mins. Brush with egg wash after 10 minutes of baking and repeat till golden brown. Remove and let cool at room temp for at least 3 day. The aging process will give you a better texture.
EGG WASH:
2 large eggs
1 tbsp water
1 tsp dark/thick soy sauce
Mix everything together and brush on cake. This will give you the darker baked color.
*Alkaline water is Potassium Carbonate and Sodium Bi-Carbonate solution. You can get it at any Oriental Market.
