Thank You: Turkey stuffing made with turkey giblets and ground beef

I am so glad to find your recipe on turkey stuffing with giblets and groung beef!
You see, in early November of 1990 my father passed away. My husband and I had just been reently married that previous summer. We were very young at the time,(just 23 and 24), and I did not do much cooking. That Thanksgiving, my mother in-law invited us all (including my mother to her home for dinner.
Since then, Thanksgiving Dinner has been her event of the year, (we all take different holidays to cook for). Though my mother in-law is a really excellent cook, her stuffing is mostly bread based. It is good, don't get me wrong, but I missed not having the ground beef stuffing and never felt it was my place to bring it as another side dish.
This year however, I will be cooking for Thanksgiving. Though I could not ask my mother for her old recipe, since she is now ill and can no longer communicate, I was so glad to find yours!
Your recipe is exactly how my mom would cook hers, using all of the same ingredients. It brings back such happy memories for me, as I recall helping her make this delicious treat, (that we really only had at Thanksgiving). I can't wait to cook it with my children, and for my mom to taste something she has not had for many years.
Thank you so much for posting this recipe. It was such a gift to me to find it. If you happen to know where it originates, please respond back. I don't know if my mom cooked it beause it was something my dad liked, (perhaps his Sicilian mother's recipe)or if it was a Spanish recipe (my mom is Puerto Rican). I do know that all my aunts on my dad's Sicilian side made this same recipe when we attended holidays at their homes.
