2nd Year Canner

This is my second year canning jam and I, too have had great success with the recipes on the pectin instructions. I've never done Raspberry and am just getting ready to go and pick some to make jam this afternoon.
One piece of advice I have on canning is to have everything you need for the job out and ready to go. I am also pretty generous with laying out dishtowels on the counter tops where I will be working to catch drips (I have a tile countertop and the grout can be a major pain to clean out!).

Also, make sure you are cooking the jam in a big enough pot. When I made strawberry jam, it bubbled over and did a number on my stove top and drip pans.

Canning isn't hard, it can be time consuming and messy, however. It's definitely worth it when you accomplish it and have some wonderful jam long after berry season has passed.
