SNAPPY SLAW
6 cups finely shredded cabbage*
2 cups thinly sliced carrot
2 cups (8 oz.) shredded Provolone cheese
1/2 cup sliced green onion
1/2 cup chopped pimiento, drained
1 (8 oz.) carton plain yogurt
2 teaspoons prepared mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Combine cabbage, carrot, cheese, onion and pimiento.
Combine yogurt, mustard, salt and pepper. Toss yogurt mixture with cabbage mixture. Chill, covered, 2 to 3 hours to allow flavors to blend.
Serve on cabbage leaves.
*Reserve dark green outer leaves of cabbage. Wash, pat dry and chill. Use to serve finished slaw.
Makes about 8 cups
