I like recipes for foods from 'state' fairs and festivals. I like to recreate them in my kitchen. At a festival in North Carolina, they sell an item called 'cheesecake on a stick'. It's a cheescake slice on a stick, and the cheesecake slice has been dipped in chocolate. I need to know how you would dip the slice of cheesecake in the chocolate without causing the cheesecake slice to melt.

I don;t know if anyone can help me with this, but all suggestions would be most appreciated. Thanks!
