Recipe: Pan-Fried Corn Fritters (using biscuit mix, 1980's)

PAN-FRIED CORN FRITTERS

1 cup packaged biscuit mix (like Bisquick)
1 (8 3/4 ounce) can whole kernel corn, drained
1/4 cup water
1 beaten egg
Butter or margarine, applesauce, dairy sour cream, or maple syrup (optional, for serving)

In a mixing bowl place biscuit mix. Add corn, 1/4 cup water, and egg. Stir till mixture is well combined.

Using about 1/4 cup of the mixture for each fritter, cook fritters in a lightly greased skillet over low heat about 10 minutes or till brown; turn once.

Serve with butter or margarine, warmed applesauce, dairy sour cream, or maple syrup, if desired.

Makes 6 to 8 fritters
