I also got a slow cooker recently and I cook for two in it. I just cut the recipe in half and cook for the amount of time they say, give or take a 1/2 hour or so. Everything comes out fine.

I've also found that it doesn't make boneless chicken breasts that well. Stick to chicken on the bone. Much more flavorful and it doesn't get tough. I bought a book called "Crockery Cookery" and it also has a lot of tips that help me out.
