Recipe(tried): Ernie's Smoked Turkey Legs (World's Best Smoked Turkey Legs)

ERNIE'S SMOKED TURKEY LEGS
8 to 12 turkey legs
olive oil
FOR THE BRINE:
3 quarts water
1 cup brown sugar
1/3 cup white sugar
1/2 cup honey
1/2 cup maple syrup
1/4 cup lemon or lime juice
1/4 cup kosher salt
2 tbsp. crushed or minced garlic (or garlic powder)
8 to 10 sprigs whole cloves
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice
1 tbsp. oregano leaves
1 tbsp. Worcestershire sauce
3 bay leaves
TO PREPARE THE BRINE:
In a saucepot, mix together the ingredients for the brine. Bring to a simmer, stirring until the sugars and salt are dissolved. Remove from the heat and allow to cool.
Pour the cooled brine over the turkey legs, completely covering the turkey. Place in the refrigerator and allow to marinate for at least 12 hours but no more than 14 hours.
WHEN READY TO COOK:
Remove turkey legs from the brine and rinse off the herbs and spices under cold water.
Rub turkey legs liberally with olive oil.
Smoke the turkey at 300 degrees F for 1 1/2 hours with mesquite, pecan wood, or the wood of your choice until the turkey legs are cooked through to an internal temperature of 180 degrees F.
